1 scoop Mini Protein superfood blend protein powder
1½ cups old fashioned oats
2 tbsp vanilla protein powder
1 banana, chunked
½ cup lite milk (alternatives include coconut or almond milk)
½ tsp vanilla extract
½ tsp baking powder
¼ tsp baking soda
1 tbsp coconut oil for greasing griddle
banana slices, peanuts, and peanut butter for garnishing
Place all ingredients into a food processor and blend until well combined into a batter like consistency, about 2 minutes (scrapping down the sides in-between)
Warm a frying pan to medium heat
Add the coconut oil and evenly distribute with a spatula until the whole surface is covered
Pour batter onto pan and flip when tiny bubbles begin to appear. Remove from griddle when both sides are browned.
Garnish with chopped peanuts, sliced banana, honey, peanut butter, or maple syrup!
